The Dubbo Winter Whisky Festival proudly presents The Distillers Dinner — an intimate, premium whisky experience bringing together some of Australia’s most respected distilleries for one unforgettable evening.
Held on the Friday night ahead of the Festival’s main event, this is a seated, three‑course dinner paired with outstanding Australian spirits and hosted in the heart of regional NSW.
Tickets are strictly limited to preserve the experience. In previous years, the Distillers Dinner has sold out quickly, attracting whisky lovers from across the state and beyond.

Across three courses of expertly prepared food by Modern Foodie Co., guests will enjoy matched Australian spirits while hearing the stories, philosophies and personalities of the featured distillers themselves.
The atmosphere is refined yet relaxed — a true highlight of the Dubbo Winter Whisky Festival weekend.

FEATURED DISTILLERS – 2026
For 2026, we are proud to showcase three outstanding Australian distilleries, each bringing a distinct style and regional character to the table.
One of Australia’s most acclaimed whisky producers, Amber Lane Distillery are celebrated for their elegant, expressive single malts. Their award‑winning approach and meticulous craftsmanship have firmly established them on both the national and international whisky stage.
From regional Victoria, Backwoods Distilling Co. have built a reputation for powerful, flavour‑driven whiskies, with a particular focus on rye. Known for depth, spice and confidence in style, Backwoods bring a bold edge to the evening’s whisky journey.
Based in the Northern Rivers of New South Wales, Winding Road Distilling Co. produce spirits that reflect their coastal environment and adventurous approach to distilling. Their whiskies and rums add contrast, texture and contemporary Australian character to the night.
HOSTED BY SCOTT FITZSIMONS
The evening will be hosted by the industry‑respected Scott Fitzsimons, guiding guests through the night with insight, humour and engaging conversation — bringing out the best of both the spirits and the stories behind them.
